I advise you to follow this article: How to create project for STM32H7 with Ethernet and LwIP stack working, this will help you to configure your project in STM32CubeMX for STM32H750-Discovery.

You can get inspired from the Ethernet applications within STM32CubeH7 MCU package:

\STM32Cube_FW_H7_V1.10.0\Projects\STM32H735G-DK\Applications\LwIP
