The boards are meant for evaluation in a lab bench type environment. I don't think they're rated for a temperature range, but should work in the industrial temp range (-40 to +85) provided you keep humidity from condensing. Certainly the chip itself will work in this range. Might want to check the temp range of the crystal on the board if you're using it for a clock source.

According your answer, to check the component's temperature, where can I find the Bill Of Materials for the nucleo-u575zi-q evaluation board ?

If you go to the product page, you can find the design files, including the BOM, under "CAD Resources":

https://www.st.com/en/evaluation-tools/nucleo-u575zi-q.html#cad-resources

https://www.st.com/resource/en/bill_of_materials/mb1549_bom.zip
