Some simple steps added to the documentation to get up and running faster would be helpful. For example recommend some simple modbus software or hardware. I would have ordered those things together..actually perhaps they should just come with the kit?

You can use free tool like QModBus together with EVALKIT-ROBOT-1 and optionally a USB-RS485 converter cables for a simple connection with PC.
