The minimum voltage of an STM32 depends on both the technology used and the respective test scope in production. For the latter reason, a minimum voltage of 2.0V is often guaranteed for so-called value line products.

However, you will find many STM32s that can be used from 1.65V: STM32F0, F3, L0, L1, while some members of one family so far is also guaranteed to work from 1.62V: STM32H7. Just open STM32CubeMX, activate the column Voltage Min in the MCU selector and you can choose your favourite.
