Hello,
I am developing a dynamometer to measure the load placed upon it. To do this, I have designed a spring so that a 1 kg load compresses it by 1 mm. Therefore, I need a sensor capable of detecting the spring's displacement with 1 mm precision.
My question is: can I achieve this 1 mm precision by using an STM LIS3MDL sensor? My idea is to place a magnet on the moving base of the dynamometer and create a calibration curve to correlate the change in the magnetic field with a 1 mm displacement. I need to be able to measure in 5 kg increments, which should correspond to a 1 mm displacement for each step.

Yeah, probably.
The exact answer will depend on how the magnetic field changes and how precise and repeatable your setup is. If it's constrained well such that the two are always in the same position at the same displacement, 1 mm seems achievable. Accuracy will be better as the magnet gets closer.
