Is it possible to define which pins are assigned to SPI in the firmware for the STM32WB5MMG?

The datasheet for STM32WB5MMG says there are 2× DMA controllers (seven channels each) supporting ADC, SPI, I2C, USART, QSPI, SAI, AES, timers. It also says to reference DS11929 (The datasheet for STM32WB55) on page 2. DS11929 shows there only certain pins dedicated to SPI. Hence, I'm confused.

DMA Multiplexer and GPIO alternate function settings are different things...

You are correct. My bad. The question remains though - am I able to define any of the GPIO pins on the STM32WB5MG to be SPI pins?
