Is there any difference in product between STM8S105K6T3 (-40°C to 125°C) and STM8S105K6T6 (-40°C + 85°C) or is it only a matter of testing temperature?

The last digit (here 3/6) only codifies the temperature range for which ST guarantees the functionality of the device.
