I haven't tried this yet but is it possible to use the ADC in dual simultaneous mode (DMA) as well as poll for conversion on other channels.

I would like to sample ADC1 (ch1, ch2, and ch3) and ADC2 (ch1, ch2, and ch3) in dual simultaneous mode DMA, continuous conversion enabled. Then be able to poll for conversion on other adc channels when needed.

Check the ADC chapter of the reference manual for your part for "injected".

The ST ADCs have two conversion schemes - regular and injected. You can configure which channels you wanted converted when you want to poll and start that conversion and if you've setup the ADCs properly, these conversions should pause the ongoing continuous conversion, do the injected conversion and the resume the continuous conversion.
