You are correct that the VL53L1X has a hard time in sunlight. If you point it straight down, or use it in shade it might be acceptable, but for general purpose outdoor applications it just won't work. Unfortunately I don't have much to suggest except to say that sonar does not conflict with the sun.
(But I'm in the Imaging group and really know nothing about sonar.)
