I have a design with STM32F427IIT6 and I would like to upgrade the MCU. I need one MCU that is fully pin compatible. What is my best choice at this moment in the F7 and H7 series?

Higher pin count devices tend to have an easier transition, 144 pin or more. Most everything has needed some fiddling or options as power pins or strategies change and evolve. Data sheets typically address changes required.​

An as Jan notes the 100-pin devices lack an pretense of pin-compatibility, ST has a odd definition of "full" and "throughout"

Wasn't able to search your part# easily on the phone, looks to be a 176-pin LQFP so probably fewer headaches.
