Can I use STM8S105 to replace STM8S005?

Well, you want to check the features of the particular devices you are using, but in general: Yes.

In reality, it would even work the other way round most of the time: The STM8S005 and STM8S105 are apparently the same die (https://hackaday.io/project/16097-eforth-for-cheap-stm8s-gadgets/log/76731-stm8l001j3-a-new-sop8-chip-and-the-limits-of-stm8flash), so a STM8S005 is just the same as an STM8S105.

It might be sold as STM8S005 because it failed some test on advertized funtionality of an STM8S105. Or maybe it is even fully functional, but there is more demand for STM8S005 than for the STM8S105 at the moment.
