STM3240G-EVAL & STM3240G-ETH UDP Serial Loop Back

Good day

I am an Engineering student currently busy with a final project. What the project breaks down to is that I have an application on Windows that sends a UDP packet to a STM3240G-EVAL & STM3240G-ETH. The kits have to be able to read the packet, send packet data over serial / GPIO, loop back on itself then send the data back over UDP. Effectively it loops whatever message it receives from UDP over the serial then back through UDP.  I have to compare the two eval kits against each other that is the reason that both are used.

Now my problem is that I have never worked within the ST environment nor do I know how to do this. I have written the Windows application and I am able to send and receive with it, so that side is not an issue. 

Can someone please assist me with the coding for these kits as it is very urgent!
