Why do some register( USB_OTG_LIB ) not in the (stm32F105/107 ) datasheet?

Which particular register(s) are you thinking of?

Note that the actual ''Datasheet'' document is just physical parameters - it's the ''User Manual'' that contains register descriptions, etc...
