Where can I find the hardware specs of these micro-controllers? Does any of these has a multi-core processor?

The Nucleo is a board with the chip on it, the former is the chip itself.

Data Sheets, User Manuals, and Reference Manuals should be a Google search away.

No, single 72 MHz Cortex-M3 processor.
